Blast chiller is a method of cooling food quickly to a low temperature that is relatively safe from bacterial growth. Bacteria multiply fastest between +8 °C (46 °F) and +68 °C (154 °F). By reducing the temperature of cooked food from +70 °C (158 °F) to +3 °C (37 °F) or below within 90 minutes, the food is rendered safe for storage and later consumption. This method of preserving food is commonly used in food catering and in the preparation of 'instant foods' as it ensures the safety and the quality of the food product.
The Blast Chill Refrigeration system is designed to quickly cool foods through the temperature danger zone most conducive to microorganism growth to assure food safety and quality. Rapid chilling also promotes increased product storage life and allows for greater labor productivity in the kitchen.

Hardware, Insulation And Construction
Unit exterior sides, front, door, top, rear and interior are constructed of stainless steel. Exterior bottom is constructed of heavy gauge aluminized steel.
Doors are equipped with guaranteed for life cam-lift, gravity-action, self-closing glide hinges with stay open feature at 120°. Guaranteed for life work-flow, door handle is mounted horizontally over recess in door which limits protrusion from door face into aisle ways. Door is standard with cylinder lock.
Easily removable for cleaning, vinyl magnetic gasket assures tight door seal. Anti-condensate heater is located behind door opening. Door is hinged left as standard.
Cabinet and door contains high density, non-CFC foamed in place polyurethane insulation.
Blast Chill Operation
In the Blast Chill mode, two blowers, as well as secondary temperature controls are in operation. Cabinet air temperature can be as low as 0°F. Close monitoring of temperature through the product probes assures rapid chilling without freezing the product.
After chill operation is complete and food product has eached target temperature, the maintenance system takes over automatically and maintains the product at set maintenance temperature.
Product temperature data is accumulated during operation and can be downloaded through a printout from the onboard printer. The control will store data for a 72 hour period.
CA cold room are made for the preservation vegetables and fruits. CA rooms can function the control of room temperature and humidity, as well as the control of concentrations of oxygen, carbon dioxide, ethylene by which the organic activities of fruits and vegetables are constrained to the dormancy states.

Banana / Mangoes are one of the few fruits that ripen best off the plant. If left on the plant, the fruit splits open and the pulp has a cottony texture and flavour. Even in tropical growing areas, bananas for domestic consumption are cut green and stored in moist shady places to ripen slowly. As bananas ripen, the starch in the fruit turns to sugar. Therefore, the riper the banana the sweeter it will taste. The commercial practice is to ripen bananas artificially by using ethylene gas. A substance produced by the fruits accelerates the normal process of fruit maturation. Temperature monitoring during ripening is critical. Normally temperatures between 14.5 ºC and 16.5 ºC will be adequate. If ripening temperatures are too high (normally above 18 ºC) the fruit can become over-ripe too fast, soften but remain green and or split through the skin. Relative Air Humidity during ripening is also critical and levels lower than 85% RH can produce ripe fruit with too much scarring and symptoms of dehydration, as well as fruit with a grayish tan.
Pressurized or forced-air rooms-pressurized rooms create a pressure gradient between rows of stacked boxes lined up into a tunnel with a differential pressure gradient between the inside and outside of this tunnel to force the air through the fruit, rather than around the boxes.
Ripening system with immission of ethylene mixture. The apparatus can be used to increase ethylene for fruit/vegetables ripening (banana, pears, mango, tomatoes, etc.) Or fruit degreening (banana). This new board including PLC system allowing the automatic immission of ethylene mixture (nitrogen at 95%) inside the room. The immission of ethylene, in combination with warm temperature, promote the metabolism of the fruits increasing their respiration. The ethylene mixture flow is regulated by the programmed system connected to the ethylene/nitrogen cylinder.
